Easy Sliced Turkey Sandwich with Onion Jam

8 oz PERDUE® Sliced Smoked Turkey Breast
2 oz red onion, sliced
1/4 tsp sugar
1 tsp salt, divided
1/4 cup distilled white vinegar
3/4 cup mayonnaise
3 each garlic cloves, smashed
2 1/2 tbsp lemon juice
2 tbsp parsley, chopped
1/2 tsp black pepper
1/2 cup baby arugula
2 each poppy seed buns, toasted
2 yellow cheddar cheese
Onion Jam Ingredients
2 tbsp vegetable oil
2 each red onions, sliced
2 cups dry red wine
1/2 cup honey
1/2 cup red wine vinegar
1. In a bowl, combine 2 oz onion, sugar, salt and vinegar. Cover and refrigerate for at least 30 minutes.

2. Make an aioli: In a bowl, combine mayonnaise, smashed garlic, lemon juice, parsley, 3/4 tsp salt and black pepper. Mix well and set aside.

3. For each sandwich, spread onion jam on the bottom half of a bun. Place arugula over jam, then turkey, then a slice of cheese, then pickled red onions. Spread aioli on the top half of each bun, then close the sandwich and serve.
