Turkey & Bulgur Wheat Salad

Number of servings: 4

Ingredients
2 cups PERDUE® 3* NAE Turkey Breast , roughly chopped
4 cups bulgur wheat, prepared
1 cup rainbow carrots, peeled, ribbons
1 cup heirloom cherry tomatoes, roasted
1 cup ricotta salata, diced
1/2 cup corn kernels, roasted
1/2 cup cucumber, sliced
1/4 cup microgreens
Ingredients for Vinaigrette
1 cup olive oil
1/2 cup red wine vinegar
2 Tpsp fresh parsley, chopped
2 tsp sugar
salt and pepper to taste
Preparation
1. Make the Vinaigrette: In a mixing bowl, whisk together all Vinaigrette ingredients; set aside.

2. In a separate mixing bowl, toss together remaining ingredients until fully incorporated.

3. Divide salad into each serving dish and drizzle with Vinaigrette.
