  • 4 PERDUE® HARVESTLAND® Boneless Skinless Breast Filet (56253), sliced (each)
  • 4 c. ancient grain medley, prepared
  • 8 petite rainbow carrots, halved lengthwise — roasted
  • 8 asparagus tips — roasted
  • 8 red bell peppers, sliced — roasted
  • 2 tbsp. lemon zest twists

Tahini Vinaigrette Ingredients

  • 3/4 c. water
  • 3/4 c. lemon juice
  • 1/2 c. tahini paste
  • 3 tsp. garlic — minced
  • 2 tbsp. mint — chopped
  • 1 tbsp. olive oil
  • 1 tbsp. salt
  • 1 tsp. sugar
  • 1 tsp. paprika
  • pinch black pepper
  • pinch ground cumin

  1. Make the tahini vinaigrette: Whisk ingredients together and chill until ready to serve.
  2. Combine ancient grains with 1 cup of tahini vinaigrette.
  3. Place 1 cup of dressed grains into each serving bowl and top with roasted carrots, asparagus and red bell peppers.
  4. Layer sliced chicken breast over roasted vegetables.
  5. Top with lemon twist and drizzle with remaining tahini vinaigrette.
