Cali Pita Pocket


  • 6 oz. Golden Pan Roasted Turkey Breast — thinly sliced
  • 1 Pita Pocket — opened and cut in half
  • 4 Bibb lettuce leaves
  • 1/2 c. Alfalfa sprouts
  • 1/4 c. red onions — thinly sliced
  • 1 tbsp. mayonnaise
  • 2 tbsp. Stone-Ground Mustard
  • 1/4 c. mandarin oranges
  • 1/2 c. diced avocado
  • 1 tbsp. lemon juice
  • 3 tbsp. pine nuts


  1. In a stainless steel bowl, mix the stone ground mustard and the Mayonnaise together.
  2. Add the Pine nuts, Avocados, Oranges and the Lemon juice and gently mix together. Set mixture aside.
  3. Place two leaves of the Bibb lettuce into each half of the Pita Pocket. Next layer in the alfalfa sprouts.
  4. Divide the Orange Avocado mixture into each of the pita pockets. Then lay 3oz of the turkey breast into each half of the pita pocket.
