Chopped Salad with Pita

Ingredients

  • 10 pc. Fully cooked breaded chicken chunks (approx. 4.2 oz.,)
  • 8 oz. Shredded iceberg lettuce
  • 4 oz. Chopped Tomatoes
  • 2 oz. Shredded Carrots
  • 2 oz. Shredded Cheddar Cheese
  • 2 oz. Ranch Dressing
  • 1 Pita Bread

Instructions

  1. Bake the chicken chunks in a 350F oven for 6-7 minutes.
  2. In a bowl, combine lettuce, tomatoes, carrots and cheese with the ranch dressing.
  3. Add chicken and mix gently.
  4. Warm pita bread in oven until heated through. Serve the salad in a bowl with the pita triangles in the side.
  5. For 20 portions: 20 (2 oz.) portions (25 lbs) Fully cooked breaded chicken chunks 10 pounds shredded iceberg lettuce 5 pounds chopped tomatoes 5 pounds shredded carrots 5 pounds shredded cheddar cheese 40 ounces (1 quart plus 1 cup) Ranch dressing 20 each pita bread, cut into triangles
