Compressed Watermelon Organic Rotisserie Chicken

  • 2 tbsp. Lemon juice
  • 1/2 c. Chili oil
  • 1/4 c. Olive oil
  • 1 c. Rotisserie seasoning
  • 1/2 Compressed watermelon
  • 2 HARVESTLAND® Organic Whole Chickens
  • 12 bunches Watercress


  1. Pre-heat oven to 350º F.
  2. Rub the Organic Chicken with the rotisserie seasoning, allow to sit for 45-60 minutes in the refrigerator.
  3. Combine the chili oil, lemon juice and olive oil, set aside.
  4. Clean the watercress, set aside.
  5. Roast chicken until cooked, allow to sit for 20 minutes then shred.
  6. Toss the shredded chicken, watercress in the chili oil vinaigrette.
  7. Arrange the watermelon on a plate and lay the watercress chicken salad around it.
