Crane Lake Wild Rice Chicken Salad

Serving Size: 1 portion

Ingredients

  • 2 1/4 c. chicken tenders or breast strips — cooked, cut
  • 3 c. Wild Rice — cooked
  • 1 1/2 c. Tomatoes — diced
  • 1 1/2 c. cucumbers — diced
  • 1 c. red peppers — diced
  • 1 c. Balsamic Dressing
  • 3 c. spinach — washed, shredded
  • 1 whole tomato — hollowed out

Instructions

  1. Prepare the wild rice as directed and then cool.
  2. Mix in the tomatoes, cucumbers, and red peppers along with the pieces of chicken. Lastly stir in the Balsamic Vinaigrette.
  3. Serve from hollowed out tomato on a bed of the shredded Spinach.
