Easy Sliced Turkey Sandwich with Onion Jam

Ingredients

  • 2 slices yellow cheddar cheese

Onion Jam Ingredients

  • 2 tbsp. parsley — chopped
  • 2 tbsp. vegetable oil
  • 1 tsp. salt — divided
  • 2 1/2 tbsp. lemon juice
  • 1/2 tsp. Black pepper
  • 1/4 tsp. sugar
  • 2 c. dry red wine
  • 1/2 c. Baby arugula
  • 1/4 c. distilled white vinegar
  • 1/2 c. honey
  • 3/4 c. mayonnaise
  • 1/2 c. red wine vinegar
  • 2 oz. red onion — sliced
  • 8 oz. PERDUE® Sliced Smoked Turkey Breast
  • 3 garlic cloves — smashed
  • 2 poppy seed buns — toasted
  • 2 red onions — sliced

Instructions

  1. In a bowl, combine 2 oz onion, sugar, salt and vinegar. Cover and refrigerate for at least 30 minutes.
  2. Make an aioli: In a bowl, combine mayonnaise, smashed garlic, lemon juice, parsley, 3/4 tsp salt and black pepper. Mix well and set aside.
  3. For each sandwich, spread onion jam on the bottom half of a bun. Place arugula over jam, then turkey, then a slice of cheese, then pickled red onions. Spread aioli on the top half of each bun, then close the sandwich and serve.
