- 3 oz. Perdue® Lower-Sodium Turkey Breast — 1/2 inch dice
- 1 1/2 tbsp. Lemon juice
- 3 tbsp. Olive Oil
- 1 tsp. Harissa
- 1/2 tsp. Cumin
- 1 c. Cous Cous — cooked, cooled
- 2 tsp. Fresh mint — chopped
- 1 tbsp. Raisins — chopped, soaked in water
- 1 tbsp. Pinenuts — toasted
- For the vinaigrette, combine lemon juice, olive oil, harissa and cumin in a bowl and mix thoroughly.
- To prepare salad, combine turkey, cous-cous, mint, raisins, and pine nuts in a mixing bowl. Add Moroccan vinaigrette, toss well and serve.
