Ingredients

  • 3 oz. Perdue® Lower-Sodium Turkey Breast — 1/2 inch dice
  • 1 1/2 tbsp. Lemon juice
  • 3 tbsp. Olive Oil
  • 1 tsp. Harissa
  • 1/2 tsp. Cumin
  • 1 c. Cous Cous — cooked, cooled
  • 2 tsp. Fresh mint — chopped
  • 1 tbsp. Raisins — chopped, soaked in water
  • 1 tbsp. Pinenuts — toasted

Instructions

  1. For the vinaigrette, combine lemon juice, olive oil, harissa and cumin in a bowl and mix thoroughly.
  2. To prepare salad, combine turkey, cous-cous, mint, raisins, and pine nuts in a mixing bowl. Add Moroccan vinaigrette, toss well and serve.
