Prepare cous cous following package instructions. Add raisins and fluff with a fork. Place cous cous in a large bowl and set aside.
Toast the pine nuts and set aside.
In a stainless steel bowl, mix the chicken strips with the yellow peppers, scallions, tomatoes, peas and cilantro. Next add the dressing, pine nuts and the cous cous with the raisins. Serve with the toasted flat bread.
