Orange Roasted Dancing Cornish

  • 8 Perdue Cornish Hens
  • 2 tsp. Salt
  • 2 tsp. Black pepper
  • 8 cloves Garlic — minced
  • 3 tbsp. Fresh Rosemary — chopped
  • 2 tbsp. Fresh Oregano — chopped
  • 2 c. Orange marmalade
  • 4 tbsp. Honey
  • 1/2 c. Orange juice
  • 2 tbsp. Lemon juice
  • 24 slices slices Fresh Orange
  • Fresh Rosemary — sprigs
  • Fresh Oregano — sprigs


  1. Preheat oven to 350º F. Rub inside and outside of PERDUE Cornish hens with ¼ tsp. salt and ¼ tsp. pepper.
  2. Place each hen on vertical roaster, wings on top, legs tucked in on bottom.
  3. In a bowl, mix together minced garlic, chopped rosemary and chopped oregano. Using 1/8 of mixture, rub onto outside of hens.
  4. In a small saucepan over medium heat, stir together marmalade, honey, orange juice and lemon juice until blended.
  5. Pour 1/8 of orange glaze over hen.
  6. Place 3 fresh orange slices around base of hen and roast in the oven for approximately 30-40 minutes, or until interior temperature is 165º F. Baste with orange glaze drippings halfway through cooking time. If top of hen gets too dark during roasting, cover with aluminum foil and continue cooking.
  7. Serve with roasted vegetables and garnish with fresh sprigs of rosemary and oregano.
