- 4 PERDUE® HARVESTLAND® Boneless Skinless Breast Filet (56253), sliced (each)
- 4 c. ancient grain medley, prepared
- 8 petite rainbow carrots, halved lengthwise — roasted
- 8 asparagus tips — roasted
- 8 red bell peppers, sliced — roasted
- 2 tbsp. lemon zest twists
Tahini Vinaigrette Ingredients
- 3/4 c. water
- 3/4 c. lemon juice
- 1/2 c. tahini paste
- 3 tsp. garlic — minced
- 2 tbsp. mint — chopped
- 1 tbsp. olive oil
- 1 tbsp. salt
- 1 tsp. sugar
- 1 tsp. paprika
- pinch black pepper
- pinch ground cumin

- Make the tahini vinaigrette: Whisk ingredients together and chill until ready to serve.
- Combine ancient grains with 1 cup of tahini vinaigrette.
- Place 1 cup of dressed grains into each serving bowl and top with roasted carrots, asparagus and red bell peppers.
- Layer sliced chicken breast over roasted vegetables.
- Top with lemon twist and drizzle with remaining tahini vinaigrette.
