Ingredients
Milk Buns
- 4 tbsp. whole milk
- 2 tbsp. water
- 2 ½ c. + 2 tbsp. bread flour
- ½ c. whole milk — warmed to 100F
- 1 tbsp. dry active yeast
- 2 ½ tbsp. sugar
- 1 tsp. salt
- 1 whole egg
- 1 egg yolk
- 3 tbsp. unsalted butter
Nashville Cheddar Sauce
- 15 oz. cheese sauce
- 1 tbsp. Nashville Spice Blend
Nashville Spice Blend
- 2 tsp. paprika
- 4 tsp. chili powder
- 1 tsp. garlic powder
- 3 tbsp. light brown sugar
- 2 tbsp. ground red pepper
Broccoli Slaw
- 36 oz. broccoli slaw — in bag(s)
- 1 green apple, — cored and julienned, skin on
- ⅓ c. apple cider vinegar
- 2 ¼ tsp. sugar
- 1 tbsp. celery seed
- 1 ½ tbsp. salt
- 1 tbsp. black pepper — ground
- 1 tbsp. lemon juice
Sandwich Build
- 6 Spicy Chicken Breast Filets — fried to internal temperature of 165F
- 6 Milk Buns
- ¾ c. Nashville Cheddar Sauce
- ½ c. Broccoli Slaw
- 24 pickled jalapeno slices
Instructions
Instructions for Milk Buns
- Combine milk, water and 2 tablespoons bread flour. Heat in pan until thickened. Remove from heat and set aside.
- Mix together warm milk and yeast. Set aside.
- Combine 2½ cups bread flour, salt and sugar.
- Add yeast/milk mixture, eggs and cooked product from step one to the dry mix. Combine for 2 minutes.
- Add butter. Mix with a dough hook for 8 minutes.
- Proof to 2X size.
- Portion into 90 gram balls. Proof for 2 hours.
- Egg wash the exterior of the proofed buns.
- Bake at 375F for 16-18 minutes or until done.
- Remove from the oven and let cool.

- In a large mixing bowl, combine all ingredients.
Instructions for Sandwich Build
- Place sauce on the bottom bun.
- Add fried chicken and top with slaw and pickled jalapenos.
- Top with bun. Serve.
