Easy Sliced Turkey Sandwich with Onion Jam

Ingredients
- 2 slices yellow cheddar cheese
Onion Jam Ingredients
- 2 tbsp. parsley — chopped
- 2 tbsp. vegetable oil
- 1 tsp. salt — divided
- 2 1/2 tbsp. lemon juice
- 1/2 tsp. Black pepper
- 1/4 tsp. sugar
- 2 c. dry red wine
- 1/2 c. Baby arugula
- 1/4 c. distilled white vinegar
- 1/2 c. honey
- 3/4 c. mayonnaise
- 1/2 c. red wine vinegar
- 2 oz. red onion — sliced
- 8 oz. PERDUE® Sliced Smoked Turkey Breast
- 3 garlic cloves — smashed
- 2 poppy seed buns — toasted
- 2 red onions — sliced
Instructions
- In a bowl, combine 2 oz onion, sugar, salt and vinegar. Cover and refrigerate for at least 30 minutes.
- Make an aioli: In a bowl, combine mayonnaise, smashed garlic, lemon juice, parsley, 3/4 tsp salt and black pepper. Mix well and set aside.
- For each sandwich, spread onion jam on the bottom half of a bun. Place arugula over jam, then turkey, then a slice of cheese, then pickled red onions. Spread aioli on the top half of each bun, then close the sandwich and serve.
