Grilled Tuscan Chicken
Serving Size: sandwich
- 6 slices PERDUE® Pan-Roasted Chicken — sliced thin
- 1 4-inch Ciabatta Sandwich Roll
- 2 slices Grilled Zucchini
- 2 slices Grilled Yellow Squash
- 1/4 c. Shredded Romaine
- 2 tbsp. Balsamic Vinaigrette Dressing
- 2 Tomato slices
- 1 Red Onion slice
- 3 tbsp. Chipotle Mayonnaise
- To make the Chipotle mayonnaise, add a little chipotle base to the mayonnaise until you have reached the desired spice level.
- Toss the romaine lettuce with the balsamic dressing and place on the bottom half of the roll.
- Layer the grilled squash and zucchini on top of the lettuce, followed by the layered chicken slices.
- Top the chicken with the tomatoes, red onions and the chipotle mayonnaise.
