Grilled Tuscan Chicken

  • 6 slices PERDUE® Pan-Roasted Chicken — sliced thin
  • 1 4-inch Ciabatta Sandwich Roll
  • 2 slices Grilled Zucchini
  • 2 slices Grilled Yellow Squash
  • 1/4 c. Shredded Romaine
  • 2 tbsp. Balsamic Vinaigrette Dressing
  • 2 Tomato slices
  • 1 Red Onion slice
  • 3 tbsp. Chipotle Mayonnaise


  1. To make the Chipotle mayonnaise, add a little chipotle base to the mayonnaise until you have reached the desired spice level.
  2. Toss the romaine lettuce with the balsamic dressing and place on the bottom half of the roll.
  3. Layer the grilled squash and zucchini on top of the lettuce, followed by the layered chicken slices.
  4. Top the chicken with the tomatoes, red onions and the chipotle mayonnaise.
